These paleo macaroons are seriously SO simply to make – you don’t need any fancy kitchen tools. Did I mention that they only use 3 ingredients? Whip up a batch or two and enjoy a sweet, guilt-free treat in no time. 🙌
Ingredients: (makes about 10 bite-size macaroons)
1 medium ripe banana*
2/4 cup unsweetened shredded coconut
1/4 cup non-dairy chocolate chips (we use Enjoy Life brand)
(*option to add 1/2 teaspoon maple syrup if bananas are not ripe)
Directions:
Preheat oven to 350°F.
Smash banana in a bowl with a fork until smooth. Stir in coconut and chocolate chips.
Drop tablespoon sized scoops onto parchment paper lined cookie sheet.
Bake for 25 mins. Allow to cool slightly.
Top with melted chocolate drizzle and course sea salt or enjoy as-is.
