Every now and then, Eric and I will find a home-run recipe that’s paleo/grain-free. This is one of them! Props to Seasonal & Savory for this gem!
This was a total “Let’s try it and see if it sucks.” kind of recipe… Neither of us had ever heard of Pannukakku, and we definitely hadn’t tried it. So, here’s what it is (basically) – Pannukakku is kind of like a Finnish pancake that has a custard texture, it’s made with eggs, and you bake it in the oven. Did I mention it’s freakin awesome?!
Here we go…
Ingredients:
1/4 cup butter/ghee
1/4 cup coconut flour
1/4 arrowroot powder
1/4 teaspoon salt
1 cup light coconut milk from a can
8 eggs
2 tablespoons maple syrup (can sub honey or agave)
Instructions:
Preheat oven to 400°F. Spread butter on 9 x 13 inch baking pan and place in the oven until hot. Meanwhile, whisk all your ingredients together until there are no lumps. Remove the pan from the oven and carefully pour the batter in, don’t splash yourself — that shiz is hot! Place pan in the oven and bake for 15-20 minutes. If you watch this stuff bake, it will blow your mind. It will get huuuuge bubbles and craters and that’s totally ok. Just enjoy the entertainment. :) Once all the edges are puffed up and the center isn’t runny, remove from the oven and serve immediately. I topped ours with some caramelized pears and maple syrup. I imagine any kind of fruit topping would be bomb. Enjoy!
