Here’s a lil’ diddy that I have no idea what you’re supposed to call… It’s an egg baked in an avocado and it’s DELICIOUS!
Don’t let anybody lie to you and say making this is easy, because they are liars. Making this was a pain in the a**. How are you supposed to get eggs to fit in the hole?! According to every other blog I’ve looked at, it’s supposed to fit nice and snug and be all pretty… yea, no.
Here’s the truth – This is gonna be tricky BUT it’s worth it. The problem with this very attractive snack is this: an egg cannot fit inside an avocado. There isn’t enough room.
Follow these very scientific instructions and you will succeed:
Ingredients:
1 avocado
2 small eggs
salt & pepper
olive oil
sriracha sauce *optional
Instructions:
Preheat oven to 425°F. Split the avocado and remove the seed. Crack the egg in a bowl, carefully scoop out the yolk, put it into the center of the avocado, fill any remaining space with the egg white, and pray it doesn’t overflow. Repeat for the other half of the avocado. With the steadiest hands you can muster, place this concoction into the oven and bake until the egg is firm (about 10-15 mins). EAT IT!
