Have you tried the black bean pasta at Trader Joe’s? Love it? Hate it? We bought some a while back and were kind of turned off by using it in place of pasta with marinara sauce (which is what TJ’s recommends – bleh!) BUT using it for a zesty pasta salad — that we love. In fact, we ate this entire recipe back-to-back one week because we liked it so much.
Here’s a super simple recipe for a healthy pasta salad using black bean pasta from Trader Joes. Hope you enjoy!
Creamy Black Bean Pasta Salad
Ingredients:
Creamy Tahini Dressing
12 oz (1 bag) Trader Joe’s Black Bean Pasta
1/4 cup sliced cherry tomatoes
1/4 cup thin sliced/chopped red onion
1/4 cup shredded carrots
1/4 cup chopped broccoli
1/4 cup chopped red bell pepper
Directions:
Prepare Creamy Tahini Dressing, set aside. Boil pasta following package directions until desired doneness. While pasta is boiling, chop veggies and place in med-large mixing bowl. Rinse cooked pasta with cold water until cooled. Combine pasta, veggies, and about 1/4 cup dressing in bowl. Combine til evenly coated. Add more dressing as desired to taste (ok to add a lil extra if planning to eat later as the pasta will absorb quite a bit of the dressing.) Enjoy!
