Grain-Free Granola Bars

Great news – making crunchy, grain-free granola bars is easy! This recipe came from a whole bunch of experimenting with granola recipes.

Feel free to swap out ingredients to suit your tastes — just keep the dry to wet ingredients ratio the same or… you’ll have loose granola, not bars ;)

PS – Hiiiighly recommend melting some chocolate and drizzling over the bars for a sweet & salty treat.

Grain-Free Granola Bars

Ingredients
2 cups unsalted sunflower seeds
1 cup pecan pieces
1 cup unsalted pumpkin seeds
1/4 cup hemp seeds (optional)
pinch of salt
3 tablespoons coconut oil, melted
2 egg whites
1 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons maple syrup (can sub honey)

Directions
Preheat oven to 325°F. Stir all ingredients together in a large bowl until everything is well blended and coated. Cover a cookie sheet with parchment paper. Using a rubber spatula, spread granola onto the pan and smooth over the top and edges. Place in the oven for 15-20 minutes or until browned around the edges. A lil’ trick – gently lift the parchment paper and if the granola lifts in one solid piece, it’s done! Remove from the oven and slice immediately with a chef’s knife by pressing the knife edge straight down. Allow to cool. Enjoy!
