No-Bake Edible Cookie Dough (gf/vegan/paleo)

I swear when it’s hot out, ALL I want to do is bake yummy things but there’s no way that I’m turning on that oven. Anybody else get that way?

So, out of desperation for something ~special~ to munch on that was still fairly guilt-free came this recipe for gluten-free, vegan, pretty much paleo, no-bake, Edible Cookie Dough. Wow… that’s a mouthful.

You’ll notice in the recipe that there are some ingredients that I’ve listed as “___ of choice.” That’s because I know there are a variety of readers with different dietary needs. So, the easiest thing to do is for me to note when you can easily substitute ingredients based on your preferences/needs and note what I did in mine so you can customize to whatever suits you best. Honestly tho, it’s cookie dough. So, like, get creative. Add some cinnamon, sprinkles, whatever the heck you want!

No-Bake Edible Cookie Dough
(gluten-free/vegan)

Ingredients:
1 cup coconut flour
2 tablespoons nut butter of choice (I used peanut butter)
3 tablespoons maple syrup
1/4 cup melted coconut oil
1 1/4 cup unsweetened milk of choice (I used cashew milk!)
1 teaspoon almond extract
1/2 teaspoon vanilla extract
1/4 cup nuts/seeds of choice (I used pecans! / optional)
1/2 cup dairy-free choc chips (I use Enjoy Life brand!)
pinch of sea salt

Directions:
Combine ingredients in a large mixing bowl until a cookie dough texture forms. Place in fridge and chill for 15-20 mins before eating.
Gobble up by the spoonful. Or roll into balls and dip in chocolate coating. If you want to get ~crazy~ try freezing it and see how it tastes. Enjoy!
