Clearly, I’m hooked on chocolate lately… whoops! A friend posted about making chocolate bark the other day and I’ve been craving it non-stop. So, of course, I had no choice but to make some and share.
This bark is crunchy, sweet, salty, and seriously delicious. Thanks to Enjoy Life brand chocolate, this is dairy-free, gluten-free, and vegan-friendly. I swear they don’t pay me to use their products so much.
My favorite part is the roasted coconut chips from Trader Joe’s. They are so light and crispy that they work super well in treats like this chocolate bark and in homemade granola/cereal. They do have some added sugar so this recipe would fall into the paleo-ish category. ;)

Coconut, Pecan, Chia & Himalayan Sea Salt Dark Chocolate Bark
Ingredients:
1 cup dark chocolate chips (I use Enjoy Life all day, errday)
1/4 cup raw pecan pieces
1/4 cup roasted coconut chips (these are from Trader Joe’s – can sub unsweetened shredded coconut, but it won’t be as delicious)
1 tablespoon chia seeds
1/4 teaspoon fresh cracked pink Himalayan sea salt
Directions:
1. Melt chocolate in microwave by heating 10-15 seconds at a time –stirring in between each time– until melted and smooth.
2. Spread chocolate out in a thin layer onto parchment paper and sprinkle toppings. Gently press toppings into the chocolate where needed.
3. Allow to cool completely at room temp or by placing in the refrigerator for about 5 minutes.
4. Break bark into bite-sized pieces and enjoy!
