Paleo or grain-free life got ya down? Sick of rice-flour based, gluten-free pancake mixes? Go ahead and bookmark this one and thank me later.
Am I crazy for being happy that these cook the exact same way a “normal” pancake does? You wait for the bubbles, flip, voila! I feel like NOTHING that is paleo cooks the same way as it’s traditional counterpart. It’s the little things in life, I guess.
If you’re a fatty like me, this recipe would serve one. But, it probably shouldn’t because it makes ~6 pancakes and uses 4 eggs.

The Perfect Grain-Free Pancakes
Ingredients:
4 eggs
4 tablespoons coconut flour
4 tablespoons water or non-dairy milk
1/4 teaspoon vanilla extract
Directions:
Preheat griddle over med heat with coconut oil. Whisk ingredients together to form batter. Pour ~1/4 cup of batter into pan and allow to cool til bubbles form. Flip, cook for another 30 secs before removing. Repeat til you’ve got yourself a nice stack of pancakes.
