These gluten free bars are sweet n’ simple and easy to make your own.
All you need is oats, nuts or seeds, some dried fruit, and your favorite nut-butter. The bars pictured use peanut butter to hold them together and have some freeze-dried blueberries inside… AMAZING flavor combo, by the way. Seriously addictive because it reminds me of a PB&J!
You can keep these bars for a few days (if they last that long) in the fridge. If they are at room temp or warmer for a while, they kind of crumble apart because the nut butter softens. I will say, I’ve eaten them crumbled to death too and it’s still pretty good so….

Gluten-Free No-Bake Granola Bars
Ingredients:
1 1/2 cups gf rolled oats
1/2 cup roasted, unsalted pecan pieces
1/2 cup peanut butter
1/2 cup raisins (or dried blueberries as pictured above – yum!)
1/4 melted coconut oil
1/4 cup maple syrup (optional)
1/4 chia seeds
Directions:
Mix ingredients together in a large bowl till everything is coated. Spread into parchment paper and use rubber spatula to shape into smooth rectangle. Chill for 10 minutes and slice with a sharp knife. Enjoy!
