I have a confession…
I’m obsessed with my food processor. There – I said it! Phew. If you don’t have a processor or even a blender, I feel bad for you. It opens up SO many possibilities for making awesome stuff at home! Get one. They aren’t expensive and pay for themselves almost instantly.
Last week, I made fresh tomatillo salsa – I didn’t even know I liked tomatillo salsa… I do! And, Eric eats some on the daily. He makes a lot of egg-fritata type things for breakfast and will spoon a little salsa on top. The flavors are really intense and garlic-y if you eat it right away and the shallots miiiight make your eyes water so I recommend letting it sit in the fridge overnight before you eat it so the vinegar can start to do it’s job. You don’t have to, we ate ours right away… just a fair warning – the raw ingredients are fragrant :)

Garlic & Lime Tomatillo Salsa
Ingredients:
2 diced tomatillos
3 cloves garlic
1/2 shallot
1/2 teaspoon sea salt
2 tablespoons white wine vinegar
1/4 fresh jalapeño pepper
1 tablespoon basil (I hate cilantro BUT you could use cilantro instead)
1/2 lime
Instructions:
Rinse tomatillos in warm water (they are kinda sticky under the leaves) and then slice into quarters. Toss in food processor or blender with all other ingredients plus the juice from 1/4 lime. Pulse until everything is well blended and salsa is slightly chunky. Garnish with lime wedge. Store in mason jar in fridge and enjoy with anything and everything!
