Mini Strawberry Galettes

These mini strawberry galettes can be filed under things that are made-up on the spot and eaten immediately. 🤤 Jotting down the recipe because it will be made more than once!

Mini Strawberry Galettes Recipe:

Yield: two 6-8 inch galettes
Total time: about 1 hour

Ingredients:
1/2 pre-made pie dough
1 lb fresh strawberries
2 tbsp sugar
1 tsp vanilla
Zest of 1/2 a lemon
Egg white for wash
Raw sugar for sprinkling
Vanilla ice cream for topping, obvs.

Instructions:
Preheat oven to 400*F. Rinse and slice strawberries, toss with 2 tbsp sugar, vanilla, and lemon zest; set aside.
For two minis, divide pie dough and roll on a flour surface into two small rectangles. Otherwise, roll out into one rectangle.
Transfer to parchment lined pan and fill with equal amounts of strawberry mixture (should be syrupy and fragrant).
Gently fold the edges up and brush with egg wash (whisk 1 egg white + 1 tbsp water) and a sprinkle of raw sugar.
Bake for 20-30 mins or until nicely golden brown. Allow to cool a bit before eating so the filling can set up a bit.
Enjoy plain or with a tiny scoop of vanilla ice cream!

PS – For this recipe, I used 1/2 of a pre-made batch of my go-to pie dough, but you could easily sub store-bought dough and double the recipe for a full sized galette or four personal-sized galettes like these.
