Latest 'Grams

Baked this sourdough loaf at the beginning of January, froze her, and just now seeing how well she turned out. The grayish color is from buckwheat flour. I accidentally over-proofed this dough, so I tested just re-shaping and baking to see if I could save it. Good news, it works! The reshaping helps tighten the gluten back up so the loaf doesn’t just spread out. She’s a little smaller than normal because I didn’t let it proof again after reshaping, but that’s ok!
