One-Ingredient Blueberry Popsicles

Did I mention before that I am hooked on making frozen treats this summer? Because that is definitely the situation. ☀️

This one is a no-brainer… The one ingredient (in case you missed it) is blueberries. Thus, these frozen treats are naturally sweet, tasty, and obviously gluten-free, paleo, vegan, etc. Hurrah! Not to mention, they are lit’rally too easy for you to not be making them all summer long.

Ingredients:
2 cups frozen blueberries (Pro Tip: You could make these with ANY frozen fruit that tickles yer fancy!)

Directions:
Allow blueberries to thaw slightly (they’ll get a lil juicy).
Place about 2 cups worth into a blender or food processor and pulse until smooth. If texture is crumbly, either allow to thaw a bit longer or add a tablespoon of water and pulse.
Once blueberries are thick-smoothie consistency, transfer to popsicle molds and freeze.
Allow to thaw slightly before eating. Enjoy!
(PS – My pop molds are on the smaller side, so I stored the rest of my blueberries in a sealed container and am calling it Blueberry Sorbet. 😉)
