I hope you love these super soft and moist paleo scones as much as we do! I’ll sometimes add oats (not paleo) for some extra texture or play around with substituting blueberries for another fruit and it’s delicious. Enjoy!
1 1/3 cup almond flour
1/4 cup arrowroot powder (non-paleo: can sub 1:1 corn starch)
Pinch of salt
1 tsp baking powder
1/4 dried blueberries (can sub fresh or frozen)
1/4 cup melted coconut oil
3 tbsp maple syrup
2 tsp vanilla extract
Mix dry ingredients (except blueberries) in a large bowl and set aside. (Non-paleo: add 2 tablespoons rolled oats for texture.)
In a smaller bowl, whisk together wet ingredients.
Combine and add blueberries -stirring gently so you don’t get blue juice all over.
Spread onto parchment paper and use oiled spatula to shape into smooth circle about 1/2 inch thick. (Non-paleo: sprinkle oats and/or course sugar on top.)
Bake at 350*F for 30 mins. Allow to cool & enjoy!
