Blueberry & Pistachio Energy Bars

Do blueberries and pistachio go together? The answer is yes! :)

Eric and I are w his fam down in Iowa for a wedding and then heading to Madison, WI on Sunday for a the Trek CX Cup. I wanted to make sure he had something good to munch on while we were gone so I whipped these up last minute. Turns out – blueberries and pistachio make a really light and tasty flavor combo!

Ingredients
8oz pitted dates (about 2 cups)
1 cup shelled pistachio
1/4 cup raw pepitas (optional)
1/4 dried blueberries
1 tablespoon honey

Directions
Toss everything into food processor or high powered blender and pulse until well chopped. Pour mixture out on parchment paper and begin smushing the mix with your hands into a firm mound. Pull sides of paper over mix and begin pressing until flat. Peel back paper and use your hands to clean up and pack in the edges. Slice into bars with a clean knife. Enjoy!
